Dear Tushar,
I have not got your question clearly but as i understood from your question, TDS rate if applicable on nature of services. Laboratory Analysis charges for Food Products is a professional/Technical work which a common man/ unprofessional person cannot do. hence TDS u/s 194J @10% should be deducted.
