What is the max % of deduction that can be made from monthly salary as per the Labour Law ? (deduction would include Itax, ptax. epf, loan etc.)

EPF- 12% on basic salary
Professional tax- based on state it will vary
Loan- based on EMI agreed with your employer
Income tax - as per Income tax calculation based on Income tax slab
