Can establishments accept old notes against sales and remit in bank? Question is how can one collect legally invalid notes...

The value of the currency notes vests with the trust, confidence, belief and faith of the users. If you have the same, you can continue accepting the same till the time you can deposit the same in your bank account.
Else, you can go by the notification by the Govt regarding exchange of OHD, deposit of OHD and so on. (OHD stands for Old High Denomination)
