if we do partnership agreement two persons for starting a hotel, & after that if they give appoint a person to carry the hotel business by getting remuneration & some portion of profit.

you have to do nothing. the share of profit shall be given out as commission or part of the salary. the partnership agreement remains unchanged.

if suppose we start a hotel business & we don't know about that business & we appoint a person to run business with 50 percent profit sharing ratio & calculating the profit on monthly basis.

its on your discretion.
make him 49% partner and give him 1% as separate commission. this keeps the control in your hands. amend partnership deed accordingly.
