Whether we have to show Maturity Amount of LIC received which is exempt u/s 10(10D) in ITR 2 under Schedule EI?

Yes disclosure of every income should b made in IRT whether it is taxable or not. In the same way LIC maturity should b shown in Exempted Income schedule.
