If co. does provision for gratuity each year and any employee left co before completing the 5 year, then co what will do of the previous gratuity provision ?

It depends on the employment contract. If gratuity is the part of salary, the same is reuired to be paid even the employee left before completion of 5 years. If not payable, surplus should be adjusted with the current year's gratuity provision.
