Pivot table is a great tool of summarizing the data and helps lot in data mining and analysis.
It helps great in the industry where volume of transaction is huge, helps in auditing. I used it frequently during bank audit. It helps in finding out the critical/ important data.
I suggest you to search for pivot table books to get indepth knowledge about it. It cant be explain by writing emails, taxt.
