can a huf be formed in the name of minor whereby the gurdian can sign as karta

i don't think so. huf is meant to be form with a person, his spouse and at least a child. so, in case of minor it can't be.

actually i have seen a demat account wherein the minor huf account has been opened and the father has signed as karta of huf i.e.

that minor must be of 17 year having a wife and a child :-) (just kidding although possible)

HUF can be formed only after creation of family, i.e after marriage of individual.
In India minors are not allowed to marry, hence HUF of minor cannot exist.
