I need to file the ITR for AY 2017-18, 2018-19 and 2019-20, i know the time has elapsed now, but is there any way which would enable me to file ITR as i'll be needing the ITRs for my visa process.

There is no way to file Income tax returns for Asst Yr 17-18 and 18-19, unless you receive notice from Income Tax.
You can file your returns for Asst Yr 19-20 along with interest & penalty.
AY 2019-2020 you can still file with applicable late fee under 234F.
In normal course you can not file for AY 2017-2018 and AY 2018-2019.
However you can apply to your jurisdictional CIT under 119(2)(b) for condonation of delay with genuine reasons and after CIT's approval you can file return for those Assessment years.
The discretion lies with Jurisdictional CIT.
