Hi,
I teach 2 courses. Can I collect the payments for course 1 as an Individual and file ITR as individual for the income from course 1 & collect the payments for course 2 as HUF and file ITR as HUF for the income from course 2.

Yes you can do the same.
But for it please maintain proper books of accounts of the different courses and file return appropriately.
