For a shop There are several purchase invoices are missed
however they have soft copies
Please advise whether soft copies acceptable as a valid evidence for GST or Income tax Purpose

Yes Income tax act and gst regulations do allow maintaining and accepting electronic records ie soft copies if certain conditions met like legibility and authenticity, digital signature, consent of recepient etc
