HI, When filing the returns, there is a section of Schedule EI in ITR2 for Exempt income. What all types of interest are expected to be filled here? PPF interest, EPF interest, Sukanya Samruddhi Interest, any other interest to be filled? Any suggestions would be highly appreciated.

You can declare interest received (If you have invested) from Tax Free Bonds issued by Hudco, Kamaraj Port and like wise companies.... But check if they are TAX Free Bonds.
All the income listed under section 10 of IT act are exempted... Refer:
