Regarding Nov 20 exams
If I opt in Nov 20 exam and attempt it in Jan 21 which will be my next attempt May 21 or Nov 21??

Jan 21 attempt will be regarded as November 20 exam.
after Jan 21 exam , you can give your next attempt in may 21.
after Jan 21 exam , you can give your next attempt in may 21.

Practically it won't be possible to appear in May 21 as results for Jan 21 will come in march and usually by that time exam forms for may are already filed, unless institute comes out with a remedy regarding this.
