If i pay Income Tax Demand just to reduce the penal interest ( for non-payment ) piling up even though I do not agree with the Demand, can I contest the Demand ( after paying it ) and Appeal against the Demand ?

No. Better appeal first by payment of just 20% of mismatch.

yes you contest the Demand , file the rectification application u/s 154 through e-filing in the case of short credit of tax payments , otherwise filed the appeal and pay 20% of the the Demand

Not a case of rectification ...its a TDS case ...employer deducted TDS from my salary but didnt deposit to Govt ...ITax Deptt raised demand against me ..

My CA didnt file Appeal within 30 days of receiving the notice. Very old case ..still Demand showing in my name ..

If you have any proof for TDS you can file a grievance to TDS mentioning your TAN for not filing TDS. Else you can file indemnity bond to your AO in the given format.
