Do e way bill have any other role in gst other than for dispatching goods by means of transportation ?
Do we need to mention e way bill details anywhere while filing gst returns?

E-way bill is just a source to track the movement of goods. You need not to mention the details in returns.
No option to show eway bill no. in gst returns. So not required.
