Officer has power to stop any conveyance and verify e-way bill and in your case where discription on Invoice and e-way Bill does not matches officer may physically verify goods and if require Officer will prepare inspection report and upload it on the portal and appropriate action will be taken.
You can change/amend EWB Form 01 PART B (Transportation Details). So you can change your Lorry/Truck number in Part B if it reflects incorrect number...
