My mother gives speech therapy to kids from home, she used to work in a hospital two years back but now she gives therapy from home and takes all the payments in cash. So my query is how a proof of that income can be generated which is acceptable by banks for her loan applications?

Ask her to file her returns and she can issue receipts for the payment received.
Also she needs to register for Service Tax
Register for service tax only if receipts cross the limit of Rs. 9 lacs
