I am registered for CS professional course and will be eligible to appear for 2 modules on December 2012. What confuses me is how many response sheets should I prepare…like for all the 8 papers or only for the ones that I am going to appear??? And what is the deadline??

There is no complusion of submitting all the response sheet. As you are appearing for only 2 mudules exam so you can submit response sheet for those two modules only but if you have written response sheets for all the modules you can submit them either...........the last date for submission of response sheet for december exam is 31 August.
