I have received an overseas order to provide them with a miniature model of their residential project. If this would have been an order in India we would have charged only Service Tax along with our charges. But since we have to ship this model from India to Other country, can someone tell me about what all the taxes shall be charged in Indian Context with their rates like Customs, Excise Duty, CST, VAT, Service Taxes.

As you are sending this model as part of your design service only and its model design only , so only service tax would apply and for the export of the services or goods the taxes are zero.
