Exempt income - which all incomes are considered as exempt ?

1) I generally file ITR-1 as I have income from Salary and FD/RD interest.

I show interest from PPF and some divident interest in Exempt income section.

I was reading today somewhere that, Other exempt income like HRA allowance, LTA allowance, Travel allowance, Medical allowance etc from employer should also be shown in exempt income. 

There are sub sections for these in ITR-2 form but in ITR 1 form there is only one box for exempt income.

I have never declared these exempt income from employer in ITR. Should these be declared and how?

2) Also, if someone whose primary source of income is salary and bank interest, earns some small amout of LTCG, should these be declared in exempt income or ITR-2 is needed to declare LTCG ?

Please give some opinion on this.

I have saved well enough in my first 4-5 years of empoyment and today I was totalling the total income declated by me in all ITRs so far and my current bank balance is slightly more than this. That's why worried. Could this be an issue?

3) Is it an issue if a normal salaried person has bank accounts in 5-6 different banks?

4) One more point under 1st point - I have changed 3 jobs so far and got leave encashment a part of which was non taxable. This also comes under exempt income which should be declated in ITR?

5) there is some income from 1-2 years before I filed my first ITR as the income was less than taxable amount. In case of a scrutiny, these are also considered right?

6) Employer's share of EPF needs to be declared somewhere?
